Freshly-laid eggs have a natural protective coating on the outside of the shell. Commonly known as the bloom but correctly named the cuticle, it effectively seals the otherwise porous eggshell. As long as the bloom is not washed off, farm eggs can be kept at room temperature. They can last up to three weeks unrefrigerated. Then, if placed in the refrigerator unwashed they last up to three months. Store brought eggs are always washed, therefore store-bought eggs, when properly refrigerated, typically last for 3 to 5 weeks.
You will not learn these interesting facts from the grocery store, but if you purchase your fruits, vegetables, meats and eggs from a farmer at your local farmers market or butcher, you will not only receive fresher and healthier produce but will receive an education as well, Missi Duley stated.
